One of my favorite things to do with my kids is to cook with them. It's always fun and it's also valuable information they need to know.

Below are some of my favorite quick, kid friendly foods. Please share the Single Mother Students community some of your favorite quick, kid friendly foods. When you send them I will post them on this site.



                                                             





Boeuf Salad by,

Ingredients: 

4 large potatoes

2 carrots

2 parsley roots

2 handful of green peas

3 sweet pickles

½ lb.poultry breast

3 tbsp.mayo or Miracle Whip

2 hard boiled eggs(chopped)

mustard,salt,pepper

Prepration:

 

You get the best taste in this salad by boiling the vegetables with the meat.Just peel them (potatoes,carrots,parsley roots)and put them in the pan together with the meat!When they’re done,cube them(the meat  and the pickles too),place them in a bowl,add the peas,the boiled eggs,add mayo or miracle whip,salt,pepper,mustard and mix well.Arrange on a serving platter and garnish with black olives ,hard boiled eggs,parsley leaves.

 

This is the best salad in the world and you can serve it in any season!!!!



Pea Salad by,
Loyce Money

3 cans peas drained
Your favoitre sytle of cheese cut into cubes, one block
1 jar of dill relish
3-4 eggs boiled and cut 
A few cups of manoyies
1 large onion cut into small cubes
salt and peper
1 can red pamintoes

Prepration:
Mix all ingredients above and chill over night. 
 

Broccoli Salad by,
Pat McClure

Ingredients: 1 bunch broccoli, finely chopped
    4 slices bacon, fried and crumbled ( I use already cooked bacon )
    2 cups red seedless grapes, halved
    1 Tbsp red onion, chopped or more if desired
    2 Tbsp sunflower seeds
    1/2 cup yogurt, plain
    1 Tbsp mayonnaise
    2 1/2 Tbsp honey
    2 1/2 Tbsp heavy whipping cream (I use Half n Half)

Directions: Mix first 5 ingredients together in a large bowl. Blend next four
ingredients thoroughly and toss with the broccoli mixture. Chill. Serves 6



Peanut Sauce

Ingredients:
1 Large onion
1 can of your favorite diced tomatoes ( I use rotel tomato brand)
1 can tomato sauce
1 can tomato paste
a few teaspoons of peanut oil
1-2 pounds of cut up beef
1/2 teaspoon crushed garlic
1 cup crushed peanuts
1 cup peanut butter, creamy
salt& pepper
crushed red pepper
 1 bag jasmine rice

 Preparation:
Heat the oil in a cooking put, add cut up onions, garlic and cook until done. Then and add in the can of drained-diced tomatoes, add in crushed red pepper and salt. Allow to cook until most of the juice has cooked out. Add in the crushed peanuts. Cook a bit longer. Place the uncooked beef into the pot and cover with water, just enough to cover the top of the beef. Allow to cook until the beef is done, add water as needed but not too much. Once beef mixture is done add in the peanut butter. Mix very well. Now add in the can of tomato sauce, mix very well again. Now  add the tomato paste as needed, to thicken it up, you might not need the paste. You want sauce but not watery sauce. Serve over the rice and enjoy.
 
 

 

Michele's famous green olive potato salad

 Ingredients:
10 potatoes, cleaned, peeled and cut into bite size cubes
1 jar of green olives, cut up
A few cups of Mayonnaise
1 large onion
i jar of dill relish
salt and pepper to taste
4 or 5 egg

Preparation:
Add cut up potatoes, cut onions and salt and pepper into a large pot.
boil until potatoes are done. While potatoes are cooking, start to boil your eggs until done, allow to cool. Once the potato-onion mixture has cooked, drain and run under cold water for a bit. Once drained of all water add to a large mixing bowl. Add the dill relish, cut eggs, mayonnaise and green olives to the potato-onion mixture, salt and pepper to taste then enjoy.


Red Potato, Potato salad by, Pat Shuey

INGREDIENTS:

·         3 pounds small red potatoes

·         2 large ribs celery, thinly sliced

·         1 cup mayonnaise, or to taste

·         1/2 cup milk

·         2 tablespoons white vinegar

·         2 tablespoons minced purple onion or sweet onion

·         2 teaspoons salt

·         1 teaspoon granulated sugar

·         1/4 teaspoon coarsely ground black pepper


PREPARATION:

Place whole unpeeled potatoes in a large saucepan or Dutch oven. Cover with water. Cover pan and bring to a boil. Simmer for 25 to 30 minutes, or until potatoes can be pierced easily with a fork. Drain and let cool until easy to handle. Cut unpeeled potatoes into halves or quarters, depending on size of potatoes. Chunks should be no larger than 1 inch.

In a large bowl, combine potatoes with celery and remaining ingredients. Toss to blend. Cover and refrigerate until serving time.
Serves 6 to 8.



 






 

Carmel Candy Popcorn

Ingredients
1 Bag butter flavored  Popped Pop Corn
No-Stick Cooking Spray
3/4 cup butter
3/4 cup of Firmly packed light brown sugar

-Preheat oven to 350°F.
Spray cooking spray.

-A bag of Popped pop corn

-Combine butter and brown sugar in medium saucepan over medium-high heat. Bring to boil boil for three minutes, stirring occasionally. Remove from heat.
-Drizzle over popped corn; using two spatulas, carefully toss to evenly coat. Spread over pan.

You can add M&M's or any kind of candy


Soft Pretzels

Ingredients
2 - 16 oz. loaves frozen bread dough
1 egg white, slightly beaten
1 teaspoon water
 Coarse salt

-Separate thawed bread into 24 - 1 1/2" balls.

-Roll each ball into a rope 14 1/2" long. Put pretzels one inch apart on greased cookie sheet.

-Let stand for 20 minutes and brush with combined egg white and water.

-Sprinkle with coarse salt. Place a shallow pan containing 1" of boiling water on bottom rack of oven

-bake pretzels at 350 degrees on rack above water for 20 minutes or until golden brown.

 


Biscuit Pizza

Ingredients

1 can of your favorite jumbo biscuit

1 can favorite pizza sauce

Peperoni, beef or Toppings of your choice
Shredded Mozzarella or Pizza topping Cheese
 
- Lightly Butter the bottom of a  pan
- Take the biscuits out of the can and flatten each biscuit then poke a few holes in the flatten biscuit.
-Place biscuit on pan then spoon pizza sauce onto each biscuit
-Add meat topping and then cover with cheese
- Cook biscuits at temperature recommended on the can

Ingredients

1 pack of of Hot Dogs
American cheese
Pillsbury uncooked croissant rolls


Slice hot dogs down the center of the hot dog lengthwise.
Add cheese and roll the hot dog in the croissant. 
Bake in oven at 350 degrees.  Cool and eat!

Carmel Pie by Dawn B

Ingredients
3 cans of sweetened condensed milk
Graham cracker pie shell(or one of your choice)
Whipped Cream
Heath bar topping

-Remove labels from the sweetened condensed milk and boil in a pan. 
- Make sure the water completely covers the cans of milk and boil for 3 hours.
-Carefully remove the cans of milk out of the boiling water.
- Allow them to cool for 15-20 mins.
-DO NOT allow them to over cool as the Carmel will be thick and hard to get out of the cans.
- Also when you open the cans be careful and allow air to escape slowly.
-Pour Carmel in pie shell and allow to cool in refrigerator for 2 hours.
-Remove pie and top with whipped cream and Heath bar pieces. 

ENJOY!


HashBrown Casserole by Alexis B 

Ingredients

Pack of frozen hash brown potatoes with onions and peppers
One 12 oz container of
One can of cream of chicken soup
One large package of sharp cheddar cheese, shredded.
                                              Ritz crackers
                                              one stick real butter

-Mix all the ingratiates( besides the crackers and butter) above in a large bowl.

-Place the potato mix in a casserole dish,

-smash crackers into fine pieces place over the potato mixture, then pour melted butter over the crackers.

                                                                                               Healthy Vs Healthier

         
As a mother I often struggle with finding the time to cook let alone cook healthy meals. Fast food is so convenient but not always the healthiest choice. Lately Fast Food Restaurants have started a trend of having a few more healthier choices for children and adults However it still can be confusing to know if what you are buying is really healthier after all.

I assume a salad is healthy but as we know this is not always the case. Even though something appears to be healthy, does not always mean it will be. So if I was to order a salad and then use two packets of Ranch dressing and load it down with bacon bits and croutons I can assume it would not be as healthy for me as it could have been, before I started to add all the wonderful toppings.

It's very clear how unclear all this can be. With all the so called "healthy" items it's hard to know what is really healthy compared to something that at first glance might seem to be healthy.

So what do we do? Our work is cut out for us! The Links below should make the decision making process a bit easier and hopefully a bit clearer.
